The Taiping Houkui, with its instantly recognizable large, distinctive leaves, grows in the Monkey Valley (Hou Keng Village) in Anhui Province and belongs to the category of the finest green teas. Its cultivar, the Persimmon Big Tree (scientifically Camellia sinensis var. Kizita), has astonishingly thick, broad, dark green, very long leaves with distinct serrations along the leaf edges. This tea practically demands the Preparation in the glass jug . After preparation, it smells of orchids and tastes sweet of chestnut and umami , with the sweetness increasing and the umami taste decreasing over time. Up to five infusions are possible. The beautiful, carefully hand-picked Leaves deserve to be protected, which is why we had them delivered to us packaged in tin cans; the dents in the cans indicate what the leaves have been spared.


Preparation recommendation: You don't need to wash this tea. Dosage: 1:50 or 1:60 tea to water, so about 3g per 150ml pot. Pour the water over the rim of the pot, not onto the tea. Use 80°C water for steeping and the first infusion. Soak the leaves (do not pour all the way up, just cover the leaves) for about 1 minute, then continue to steep and drain after another minute. From the second infusion onwards, use 85-90°C water, never over. Steep each infusion 10 seconds longer, so 70/80/90 seconds, etc. The infusions do not need to be drained completely. We drank five infusions.


The tin can primarily serves to protect the tea and is only marginally decorative. Dents on these cans are rare!
