Water : 100°C—a rolling boil to awaken both tea and peel.
Steps :
Awaken : Rinse swiftly with boiling water, a baptism of heat.
Unfold : Pour with intention. First three infusions (10–15 sec) burst with citrus-kissed caramel ; later steeps grow velvety, like molasses on oak .
Persist : 8–10 steeps, until the leaves sigh their last.
