Our new jasmine teas come from from Fuzhou, the place of origin of jasmine tea . The traditional production method for Fuzhou jasmine tea has been included in China's list of national intangible cultural heritage . For genuine Fuzhou jasmine tea, Excellent ingredients are used and elaborately processed : only in this way can tea and the aroma of the jasmine blossoms combine so perfectly.

Roasted green tea from the Fujian mountains is often used as the base tea, as it is optimal for absorbing the aroma. The local single-flowered jasmine is used exclusively, picked at night in summer to protect the delicate blossoms. Because the tea is picked in spring, it must wait some time for its blossoms to bloom. Tea and fresh blossoms are stored in four to nine layers, allowing the tea to absorb the jasmine fragrance – each layer lasting more than twelve hours. The tea is turned at night to prevent overheating. After the process, the wilted blossoms are discarded. The oxidative processing results in the tea having white or yellowish hairs.

The source of our jasmine teas is a fourth-generation family business , known for its unique “fusion of tea and jasmine soul.” Before the implementation of this idea can be pursued, the preparation of Fuzhou jasmine teas: We choose 2.2 g of jasmine tea for our 110 ml gaiwan. For the first infusion, we select 85°C water temperature and a 5-second brewing time, but only fill the gaiwan to 70%. This infusion is more of a tea bag, but on the other hand, it's too good to be thrown away. The second infusion is allowed to brew for 15 seconds at 85°C, but is poured fully. From the third infusion onwards, we generally use 90°C water and also choose a 15-second brewing time for the third infusion. We then increase the brewing time by 5 seconds each. After brewing the tea, we wait about 3 minutes until the tea has cooled to about 60°C.

If you choose longer brewing times or higher temperatures, the tea may become bitter.

We offer you green Fuzhou jasmine tea in two varieties at the “Jasmine Sweet Snow Bud” was scented five times, “Jasmine Silver Needle” six times.

The Silver Needle is more delicate, milkier, and sweeter than the Snow Bud. We certainly didn't detect any bitterness. Something else is even more fascinating to us: The tea and jasmine aromas have now completely blended together to create a unique taste. We now understand: This complete fusion is what was originally intended when making jasmine tea. We can finally drink such a tea . We've enjoyed seven infusions of this delicacy.
