Bai Mu Dan is plucked 5-7 days later than Silver Needle. Each tender bud comes wrapped in one or two downy young leaves. It takes 4-6kg of fresh leaves to make just 1kg of this "King of Bai Mu Dan".

Compared to Silver Needle, this tea shows more green tea character - more floral with honeyed sweetness, less pronounced minerality, and a subtle green apple note. In summer, try brewing it cold: use 3g tea per 500ml chilled water (4°C), steep in the refrigerator for 6-8 hours, then serve over ice cubes.

Surprisingly, ice cubes also play a role in hot brewing! First "wake up" the leaves by pouring ice-cold water (with actual ice cubes) over them for just 10 seconds before discarding. Then begin proper brewing:

For the first infusion, use 92°C water poured slowly along the gaiwan's edge. We recommend 15 seconds - you'll be greeted by wild orchid aromas.

The second and third infusions need only 90°C water, steeped for 20 and 25 seconds respectively. These brews grow sweeter like honey while keeping their floral charm.

From the fourth infusion onward, use boiling water (100°C) with at least 30 seconds steeping. Expect at least 8 satisfying infusions from these generous leaves.
