We offer the Mingqian green tea "Xi Hu Long Jing Nr. 43" this year in three quality levels, all harvested on March 20th. Due to the respective altitude, the leaf material becomes more tender with increasing quality level. The infusions differ significantly.The Longjing of the silver level consists of small leaves. It presents itself full of umami, sweet, oily and with the familiar bean aroma; the Huigan is long-lasting.When preparing green teas with such delicate leaf material, the water should generally be poured over the rim of the gaiwan or pot. For Longjing, in addition, a little hot water (80-85°C) should be swirled in beforehand to slightly soften the leaf material. This method can also be tried with other Mingqian teas if the tea is rich in buds and the buds are firm in the dry state. The water should just cover the tea. Then the actual infusion follows. Whether soaked or not: In our view, a water temperature of 90°C for the infusions should not be exceeded; as a rule, 80-85°C is just right. The ratio of 1g tea to 50ml water may be a bit higher for small vessels. A steeping time of 30-45s for the first infusion is usually suitable. During the pauses between infusions, the lid of the gaiwan is removed.
