The Mingqian green tea "Zhu Ye Qing," from Emei Shan, Sichuan, picked on March 17, 2025, is stronger compared to Maofeng, full of umami, slightly grassy, and also tastes slightly of bamboo. Its cooling temperament should appeal to fans of Japanese teas.When preparing green teas with such delicate leaf material, the water should generally be poured over the rim of the gaiwan or pot. In our view, a water temperature of 90°C for the infusions should not be exceeded; as a rule, 80-85°C is just right. The ratio of 1g tea to 50ml water may be a bit higher for small vessels. A steeping time of 30-45s for the first infusion is usually suitable. During the pauses between infusions, the lid of the gaiwan is removed or pushed slightly to the side.
